Tea Syrup...

Since the blog is titled A Little Sweet Tea and Sass, and since I've given y'all plenty of sass the past four months, I reckon maybe I should give you some sweet tea today on Recipe Sunday.

In the south we like our tea sweet but most of the time a pitcher full goes too quickly and it takes time to make another one. So we've learned how to make tea syrup. You brew it up, put it in a jar and you can keep a crowd in tea for hours without going back to the stove to make more. We do this at weddings and showers in particular so that the guests don't get so dry they're spittin' dust.

TEA SYRUP
10 Family Sized Tea Bags
5 cups of sugar
6 cups of water

Bring the water and sugar to a boil. When it reaches a boil and the sugar is dissolved add the tea bags and boil for ten minutes on medium heat.

Cool and store in a jar until you need it. This keeps very well for several days. When you are ready to make tea, you add 1/2 cup of syrup to a quart of water.

I make two recipes if I'm expecting a big crowd so that I don't run out but I never double the recipe and try to do it all at once. Also, I've found that a tablespoon or maybe a smidgen more in a glass filled about 2/3 full of water and then ice makes a quick glass when you don't want to make a whole pitcher full.

Now pour up a glass, go sit on the porch and enjoy the rest of your long weekend!

  1. Wow I'm from the south and never heard of this. We drink two gallons of tea a day at our house. My kidneys stones yell hip hip hooray. Sorry but I have to have my tea!
